• The raw articles are placed in our bespoke air-drying units. Here, the meat is exposed to low heat, slight humidity, and consistent airflow, which air–dries the product.

• Active water levels are monitored until they reach the necessary reading, at which point the microorganisms and bacteria will no longer pose a threat.
